When I saw that <a href="http://mothersbrewing.com/">Mother's Brewing Company</a> was having a recipe contest, I knew I wanted to submit a beer brownie recipe. Chocolate and beer are two of my favorite things! Mother's is a local favorite of mine, but my absolute favorite beer they make is Winter Grind coffee stout. It's great for winter months as the name suggests, and the coffee flavor is prominent, but not overpowering. I decided to go with a Squashed chocolate pumpkin porter glaze, because duh, chocolate and pumpkin. It may seem like these brownies have a lot going on, but the flavors work well together and are ten times better than any brownie that comes from a box. Here's the instructions, recipe follows!<br />

In double boiler, melt butter and semi sweet chocolate. You'll only need 3/4 of the 4oz chocolate package. Feel free to eat the rest, because hey, you deserve it. While that's melting beat together sugar, brown sugar, and eggs with electric mixer high speed until thoroughly mixed, then add in vanilla. Once butter/chocolate mixture is nice and melty, stir in the Winter Grind and chilled coffee. Once mixed, add to other wet ingredients in large bowl. Stir in flour mixture until combined, but be careful not to over mix. Fold in chocolate chips. Pour in a 9 x 13 baking dish and put in the oven.<br />

Bake for 30-35 minutes until a toothpick comes out clean. Or a cocktail umbrella because you're out of toothpicks.<br />

While the brownies are baking, start making the glaze.<br />

For the brownies:<br />

Ingredients:<br />
1 3/4 cup flour<br />
1/3 cup cocoa<br />
1/2 tsp salt<br />
1/2 cup (1 stick) butter<br />
3 oz semi-sweet chocolate<br />

1 cup Winter Grind coffee stout<br />
1/2 cup chilled strong brewed coffee<br />
1 cup chocolate chips (I used mini chocolate chips!)<br />

1/2 tsp pumpkin pie spice<br />
Splash of heavy cream<br />

1. Heat Squashed in small saucepan for about 10 minutes, be careful not too overheat it, as it gets super frothy. This will make it a little syrup-y and will also cook the alcohol out if you're concerned with that.<br />
2. Whisk powdered sugar and Squashed in small bowl, add pumpkin pie spice. Add a splash of heavy cream to the desired consistency, see photo above for what mine looked like.<br />

I stored my glaze in a separate container and added it to the brownies upon serving. Store in the refrigerator. Nice was a foreign exchange student from Thailand at my high school like five years ago and we had managed to keep in touch on Facebook. She happened to be studying in Stockholm this semester, so we decided to meet up! It's funny how life works out sometimes and people you thought you'd never see again show up in your life at the most random times.<br />

We went on another free walking tour and learned that H&M was founded in Sweden. We celebrated by buying stuff, of course. Stockholm is also home to the largest Ikea in the whole world. The closest Ikea to me at home is about nine hours by car, so this was a huge deal to me. We ate as many Swedish meatballs as possible and admired the beautiful rooms. Ellea accidentally took out 5,000 Swedish kronos because the exchange rate there is a bit confusing, which is about $600 (we were only there two days). We saw a fake office that could be bought in it's entirety for about how much money Ellea had. We giggled a lot. We also visited one of the Archipelago islands surrounding the city. It was absolutely beautiful.<br />

A couple years ago, I saw <a href="http://thecookiecutterblog.blogspot.com/2010/09/ikea-cookbook-hembakat-ar-bast.html">this</a> cookie cookbook online. The books were given out for free, but only in Sweden stores. I had asked a friend in Sweden to grab me a copy, but no such luck. I had completely forgot about it until I saw a random, lonely copy on a shelf in one of the kitchens. I grabbed it and swooned at how pretty it is. The nice Ikea man let me have it for free, the only problem is, it's all in Swedish...<br />

There was a lot of food (steak and Guinness pie, shepherds pie, and countless potatoes), a lot of beer, and a lot of really amazing scenery. We took a free city walking tour, which I really wish we had in America. Basically natives of a city guide tourists around the city and tell them cool stories and you only pay them what you think they earned. It's a really cool concept.<br />

My favorite part of the Ireland trip was our day excursion to Galway and the Cliffs of Moher. The pictures don't even do it justice.<br />

My friend <a href="http://whimsandwanderlust.blogspot.com/">Allison</a> came to visit me for Queen's Day, which is basically a giant celebration where people wear orange (Holland's country color) and get really drunk in the streets and ride on boats. It's actually to celebrate the Birthday of Holland's previous Queen, but that's how people "celebrate." Prior to all of the Queen's Day shenanigans, we explored Amsterdam and I showed her my favorite spots. I <b>finally</b> took my picture with the I Amsterdam sign, which I actually wrote a paper about regarding Amsterdam's city marketing. Yes, we actually have to study in Amsterdam sometimes. We went to a cute little town called Zaans Schaans, which has the most windmills I've ever seen. We also visited the most gorgeous library I've ever been to. </div>

On Queen's Day we walked around and attempted to drink gross, warm Heineken. We ditched the Heineken halfway through the day and made some Dutch man very happy. The day after Queen's Day we saw a Train concert. I haven't really listened to them much, but it's Allison's favorite band so we went! It was a good time and the venue was an old church!</div>

I've had strep throat for the past four days and have pretty much only left my bed for grapes. Seriously. I am way behind on blogging and hopefully something good can come from this terrible illness. But on happier note, I find a new reason to love this city every day. A few weeks ago I went to the flea market with my friend Ellea in Noord. I'm used to seeing all of the same things in Springfield, MO, which has spoiled me on the flea market front. We have over fifteen at least. We had to take a cute, lil' ferry to get there and it was a beautiful day! I managed to only buy some pretty mid-century shot glasses and a set of tin canisters. I am now an international canister collector. I fell in love with an antique, wooden Heineken case, which would have made a beautiful shelving unit, but I don't think American Airlines will accept that as my "personal item."<br />
<br />
After the flea market, we went to a <a href="http://www.brouwerijhetij.nl/">brewery</a> inside of a windmill! I got the sampler to make my papa proud and stole a couple coasters. I also spotted a Boulevard Pale Ale in the bar's giant collection of bottles. I was impressed.<br />

I always enjoy escaping the tourists and crowded city centers. We originally ventured to this part of town to see original Banksy graffiti, which we did. At first we thought we had stumbled into the ghetto a little bit, but then after further exploration, we concluded it's a hip part of town and they prefer things that way. Eastern London is kind of vintage heaven. I did not spend a dime, which I have no idea how I managed. The pound is a lot more than the dollar and the vintage was not too cheap, not like in good ole' Springfield, Missouri. There is a Lomography store there, which also has the cutest little developing area. I'm really proud I didn't buy anything, especially here. We also went to London's first vintage department store and I was completely smitten. After, we browsed through a shop with literally hundreds of gorgeous leather weekend bags, but I did not see a single Samsonite. This surprised me a little bit, but it's probably good because lord knows I have enough.<br />

We both had our first hostel experience and I'm so happy we were together. Our London shenanigans included: joking about being "panicked on the streets of London" when almost getting hit by traffic, seeing lots of museums (despite our lack of interest in museums), exploring markets, enjoying afternoon tea, eating Hummingbird Cupcakes, meeting one of my all time favorite actors, drinking beer in the coolest bar built in an old horse stable, going to Westminster Abbey for Easter Sunday service, and endless hours searching for "rubbish bins." It was a fabulous time, although I'll be staying in Amsterdam for a bit. London is pretty expensive.<br />

It seems if I'm always in a rush to leave here, haha but that's just because I'm closer to all of these exotic, European cities than I normally am. I love many things about this city. Everyone is very sweet and generous when giving directions. The canals are beautiful. I can ride my bike almost anywhere in twenty minutes. I can admire the gorgeous canals while riding my bike. I constantly meet people from all over the world. And did I mention how breathtaking the canals are? I've had to study for exams this week, which are pretty much the equivalent to finals in America. The other night I sat on our balcony and drank some wine while my Italian flatmates played the acoustic guitar. I'm living the dream.<br />

I've been too busy enjoying the beautiful city of Amsterdam and exploring other cities too, like Budapest! I went to Budapest during my spring break for two nights. I didn't know much about Hungary, but the airfare was insanely cheap so I tagged along with some friends. The city is divided by a river, which has gorgeous bridges attaching the two. It was absolutely beautiful. They have delicious food and everything is cheap. These are obviously my priorities. Haha we stayed in an actual hotel, with a giant bath tub, that I unfortunately didn't get to bathe in. My favorite part of the trip was visiting the famous ruin pubs. They're old buildings that were destroyed during World War II, but have been somewhat renovated and turned into bars. There's graffiti everywhere and all the furniture is mismatched. You can even sit in an old car or bath tub.<br />

We met up with them in Amsterdam too, they were cool. They suggested I go to Germany with them in their rental car, while it seemed like a somewhat stupid idea, I went for it. I got to check off two of my goals (ride on the autobahn and do something that terrifies me a little). My friend from Missouri, Allison, lives in Aachen, Germany and they agreed to drop me off there, at the small price of Doritos and Red Bull (I'm discovering all sorts of cultural similarities). They stayed in Aachen one night and I went exploring with them while Allison was in class. I had a great time and it was nice to see a familiar face. I'm learning good things can come from spontaneity.<br />

I need to get better at blogging in a timely manner, but anyway, I went to Bruges! We took a train from Brussels for a little day adventure. I'd heard good things about Bruges and was definitely not disappointed. The city has canals like Amsterdam, but feels so much older. The architecture is very medieval and the city doesn't seem very big. We took a tour of a brewery called De Halve Maan, which was awesome. But my favorite part of the whole day was going to the roof of the brewery where we could see all of Bruges. It was at least in the top five most gorgeous things I've ever seen.<br />

We stayed in Brussels, but took a day trip to Bruges. Bruges deserves it's own post, as does Brussels. Brussels is the capital of the European Union and had lots of sites to see. We stayed in a quaint, little hotel and ate way too many chocolates and waffles. I'm still figuring out if I prefer more text or photos, but this post is really heavy on the photos. I enjoyed the weekend trip and cannot wait to start traveling around Europe more!<br />

We went to The Pancake Bakery, which I'd heard mixed reviews for. Some said it was just popular for tourists, while others said they were the most amazing pancakes they'd ever eaten. The place was cute and pub like. It had cute, old photos of Amsterdam hanging on the walls. Although I have no other Dutch pancakes to compare them to, they were pretty delicious, or lekker as the Dutch would say. We decided to share a bacon and cheese pancake and a nutella and banana pancake. The nutella one was of course my favorite. The pancakes were about the size of a medium pizza. I will be full for at least 24 hours now. Everything here is much cuter and has so much history. The differences can be challenging to overcome at times, like when I have to pay to use the restroom or when I'm completely overwhelmed by all of the Dutch words at the grocery store. However, I have noticed similarities and I always take a minute to appreciate those little moments. I've been developing a mental list of my favorites and figured I'd share them with you.<br />

I appreciate the differences at times too. Like today I passed the cheese market, where I got some delicious, Tallegio cheese, and the most adorable, well-mannered puppy was sitting outside the cheese store patiently waiting for his owner. Not tied up to anything, he was just chilling watching his momma buy some cheese. It kind of made my day.<br />

There was so much to look at there, but our favorite thing to see was all of the puppies! I miss my dogs (Mom, please tell them they were featured on my blog). I sat next to a nice, Dutch man who was an engineer! I didn't sleep a wink and was forced to watch the same episode of How I Met Your Mother about three times and some strange movie starring Justin Timberlake. Luckily, I found five other girls on my flight also studying at UvA. We took a bus together to our housing office to get our keys. I had my first Dutch stroopwaffel, which tasted exactly like the ones my mom bought at Costco, which was a let down. After I arrived, I ventured to a department store about twenty minutes away by foot called <a href="http://producten.hema.nl/">Hema</a> and instantly fell in love. They also have one of the coolest Flash websites I've ever seen. I got a little crazy at Hema. Everything here is much smaller. Not only soaps and lotions, but everything. The largest amount of toilet paper I could buy in a package was 4 rolls. While checking out, I turned next to me and saw my roommate, Pela, whom I hadn't met yet! We recognized each other from Facebook and walked home together. Pela is basically Danny Tanner from Full House, but a Greek woman. We cleaned the kitchen last night for over two hours and she found things for me to scrub my mother wouldn't even have noticed. In her defense though, it was pretty disgusting. I'll be uploading pictures of my apartment soon.<br />

Today was long. It began with my residence permit appointment, which I was late to because I got very lost. The Dutch really dislike tardiness, which was embarrassing. Orientation began today too and I have about 15 other students in my group. I've met people from all over: Sweden, Australia, Germany, Italy, Spain, South Korea, Ireland, and lots of Americans. I've noticed I've started speaking with really proper English (you can probably already tell) because most of the people I speak to learned English as a second language. I envy people who know four or five languages. But my new German friend told me I should be thankful I speak English so well, because that's how we are communicating! Haha, which is true I guess.<br />
<br />
I walked a ton today, including two hours in the bitter cold to find my apartment. Luckily I was not alone. I was with a guy from New York and a girl from Spain, who live fairly close to me. I also purchased my bike today. It's a grey single gear and has a yellow seat. It's pretty charming. I haven't rode it yet, which should be pretty interesting. Traffic is a bit confusing, because there are seriously five different lanes in each direction. One for pedestrians, one for bikes, one for cars, one for busses, and one for trams. I feel like I'm playing Frogger a little bit. I haven't been too homesick yet, mostly I just miss familiarity. And not being confused most of the time.
